Higher ceilings were a way to symbolize success, plus they are easier to look at once decorated with moldings, etc. and some even with murals. Unfortunately, they cost a fortune to heat/maintain, and so many new houses are built with considerably lower ceilings.

This was mostly because there was no airconditioning and it allowed the heat to rise and the room to stay cooler. You will find higher ceilings in older homes in the South.
